I have coached athletes for a year now and my recent highlight was being the national sprint coach for the South Sudanese Junior national team at African Junior Champs.

My typical structure is

Monday-Acceleration work(anything from 10m-30m. Also these are the power days , so medball throws , standing long jumps etc)
Wednesday-Upright mechanic/Speed
Friday- a blend of acceleration and top end speed
